The way I understand it (and I am a total amateur) is that the lid keeps the moisture in, like a small-scale version of what would happen in a fancy-schmancy steam-injected baker&#039;s oven.  And the result is AMAZING CRUST.  
I bet it would still be pretty good without a lid though - I should try that one of these days.
