I am going to give this a try. I am looking around the kitchen for something with a lid that will work in the oven.

My wife does not understand why I can’t use a regular bread pan. Why the lid?

Hi Joe –
The way I understand it (and I am a total amateur) is that the lid keeps the moisture in, like a small-scale version of what would happen in a fancy-schmancy steam-injected baker’s oven. And the result is AMAZING CRUST.
I bet it would still be pretty good without a lid though – I should try that one of these days.
