The Canopus (ADVC 700) has been working great for us - it was here before me so I had no part in the decision to buy it, but I think it&#039;s a good machine for our project size/budget size.  

We run the video from players (Beta, Umatic, and VHS) through a Sony selector, which outputs to a) a monitor and b) the Canopus, then Firewire from the Canopus into the Mac laptop we&#039;re recording onto.  I&#039;ve never run into any problems with the Canopus in the six months I&#039;ve been here.  

So there&#039;s my two cents&#039; worth.  Let me know if you have any other questions!</description>

The way I understand it (and I am a total amateur) is that the lid keeps the moisture in, like a small-scale version of what would happen in a fancy-schmancy steam-injected baker&#039;s oven.  And the result is AMAZING CRUST.  
I bet it would still be pretty good without a lid though - I should try that one of these days.

I now use both extensively (Chrome has those support too) (although I also have Opera and Safari as standby browsers (and IE as standby to standby&#039;s))... I&#039;m kinda schizophrenic in this aspect :P
It&#039;s great to have competition... 

One thing I miss in Opera and Chrome is ad-blocking... You can get it to work in them but Adblock Plus in Fx is so much more awesome...</description>
