Nice! I've used VLC too -- it works nicely and with every format you can throw at it.

I, too, have noticed how Apple has increased its control over everything, especially with iTunes, apps, etc. I don't use many Apple products, though. I grew up on Windows and have always been concerned by being locked into Windows.

My blog has been slow of late. But I've been meaning to make a list of all the open source software I'm using. Even at work I am attempting to move away from all closed source.

Re. #4 -- I read this article on the airplane (in the International Herald Tribune) and thought of you. I actually thought of clipping it, but then I realized you would OF COURSE see it yourself :)

Hey Aaron -
The Canopus (ADVC 700) has been working great for us - it was here before me so I had no part in the decision to buy it, but I think it's a good machine for our project size/budget size.

We run the video from players (Beta, Umatic, and VHS) through a Sony selector, which outputs to a) a monitor and b) the Canopus, then Firewire from the Canopus into the Mac laptop we're recording onto. I've never run into any problems with the Canopus in the six months I've been here.

So there's my two cents' worth. Let me know if you have any other questions!

Sorry to post OT, but I noticed in the UH Press Release that you're using a Canopus to digitize content. How's that working for you? I ask because we're contemplating using a Canopus ADVC110 at work to record some video. And I'm always looking for advice!

Hi Joe -
The way I understand it (and I am a total amateur) is that the lid keeps the moisture in, like a small-scale version of what would happen in a fancy-schmancy steam-injected baker's oven. And the result is AMAZING CRUST.
I bet it would still be pretty good without a lid though - I should try that one of these days.
Let me know what you try and how it works!

My wife does not understand why I can't use a regular bread pan. Why the lid?
